Another delicious fall recipe. It’s not as healthy as our muffin version but just as tasty.
Ingredients
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon of salt
1/2 tablespoon nutmeg
1/2 tablespoon ground clove
1/2 tablespoon ground ginger
1/2 tablespoon cinnamon
1 egg
1/2 cup light brown sugar
1/2 cup sugar
1/2 cup vegetable oil
1 1/2 tablespoon vanilla
1 small can of pumpkin purée
Chocolate chips (I use 3/4s of a bag)
1. Preheat oven to 350
2. In a small bowl mix the flour, baking soda, baking powder, salt, nutmeg, cinnamon, ginger and ground clove together.
3. In another bowl mix the sugar, the brown sugar and vegetable oil really well.
4. Add the egg and the vanilla and mix
5. Now add the pumpkin purée to mix
6. Slowly mix in the dry ingredients, make sure to scrap down the sides.
7. With a wooden spoon fold in the chocolate chips
8. Place on a baking sheet 2 inches apart and make for 13 minutes. Let it cool before moving to a wired rack and enjoy.
